Quinoa, lupin beans, barley, and pitahaya are foods that have always been staples in Ecuadorian households. However, due to the COVID-19 pandemic and the urgent need to boost consumers' immune systems, investment in the superfood sector increased globally during this period.
Undoubtedly, a booming strategic sector like superfoods requires the adoption of new technologies. Innovation is essential for specialization and competitiveness; however, innovation isn't for just one player. Collaboration is key to sharing experiences and developing new and effective solutions that have a real impact in these areas of specialization.
