Formulation of biosanitizers from microbial surfactants for their application in the Food industry

General Objective: The general objective of this project is to evaluate microbial surfactants (TSM) isolated from Ecuadorian Bacillus strains for the development of sustainable cleaning systems and thus, potentially, replace synthetic surfactants LAS and SLES.

Specific objectives

  • Produce microbial surfactants at the laboratory level from Bacillus subtilis DS23 and Bacillus licheniformes.
  • Characterize the physicochemical properties of surfactants produced by Bacillus subtilis DS23 and Bacillus licheniformes.
  • Scale TSM production in a 10-liter bioreactor considering the maximum oxygen transfer rate and the maximum specific rate of oxygen consumption.
  • Formulate cleaning products replacing synthetic LAS and SLES surfactants with TSM
  • To evaluate the effectiveness and toxicity of the formulations obtained against pathogenic microorganisms, food matrices and fibroblast adherent cells cultivated in vitro.
  • Evaluate the effect of the formulations in open cleaning systems (clean in place, CIP) and closed (clean out place COP) considering the impact in the social, economic and environmental context.
  • Disseminate the results obtained through digital tools for the scientific community and national industries.
